Biologik xususiyati, ta&#8217;mi va sifati jihatidan boshqa yog&#8217;lardan ustun turadi, inson organizmida engil (95% gacha) hazm bo&#8217;ladi. Tarkibida sut yog&#8217;i kamida 72-82,5% (eritilgan S.da 98-99%) ni tashkil etadi, yog&#8217;kislota- lari majmui, fosfatidlar va yog&#8217;da eriy- digan vitaminlar, sutda bo&#8217;lgan oqsil, uglevodlar, ayrim suvda eriydigan VI- taminlar, mineral moddalar va suv bor. 18-23\u00b0 da qotadi, 27-36\u00b0 da eriydi. S. eritilmagan va eritilgan xillarga bo&#8217;linadi. Ilgari S. kuvda pishib olin- gan. Sanoatda eritilmagan S, asosan, 2 usulda: 30-45% li qaymoqni quvlab va seryog&#8217;qaymoqni qayta ishlab tayyor- lanadi. Kuvlab olinadigan S. qaymog&#8217;I 85-90\u00b0 da pasterlanadi (q. Pasteri- zasiya), so&#8217;ngra 4\u2014 8\u00b0 gacha tez sovitila- Di. Natijada sut yog&#8217;i diametri 1-3 mm li donalarga ajraladi, ulardan yog&#8217;siz qismi ajratilgach, tayyor S. presslanadi. S e r yo G&#8217; (80% gacha) qaymoqdan S. ishlab chiqarishda pasterlangan qaymoq bosim ostida moy ajratkichga uzatiladi, unda jadal aralashtirib turiladi va 12\u2014 14\u00b0 gacha tez sovitiladi. Pasterlangan qaymoqqa qand, kakao va vanilin kabi xushbo&#8217;y moddalar (shokoladli S), tabiiy meva sharbati va shakar (mevali S), asal (asalli S.) qo&#8217;shib, aralashmali S. tay- yorlanadi. Eritilgan S.ning tuzeiz, tuz- li va b. xillari bor. Eritilmagan S.ni eritib va qo&#8217;shimcha aralashmalardan tozalab, eritilgan S. olinadi. Eritil- gan S. buzilmaydi.
