(3-amilaza yuksak o&#8217;simliklarga xos bo&#8217;lib, maltoza va yirik molekulali dekstrinlar hosil bo&#8217;lishini tezlashtiradi. Glyukoamilaza hayvonlar koni, mog&#8217;or zamburug&#8217;lari, bakteriyalar va boshqalarda bo&#8217;lib, glyukoza va dekstrinlar hosil bo&#8217;lishini tezlashtiradi. Odatda polisaxaridlar gidrolizida turli Amilzalar baravariga qatnashadi. Unib chiqqan arpa urug&#8217;lari ekstrakti ta&#8217;sirida kraxmalning shakarlanishi (Amilzalarning fermentativ ta&#8217;siri)ni rus akademigi K. S. Kirxgof birinchi marta tasvir etgan (1814). Amilzalarning fiziologik ahamiyati shuki, u hujayralardagi polisaxaridlar zaxirasini safarbar qiladi (masalan, urug&#8217; unayotganda). Ovqat hazm qilishda ham Amilzalarning ahamiyati katta; hayvonlar hamda odamning so&#8217;lagida va me&#8217;da osti bezining shirasida Amilzalar bor. Mikroorganizmlar kraxmalni iste&#8217;mol qila turib, Amilzalar chiqaradi.
