Har 3 soatda bir marta sog&#8217;iladigan biya sutini sut kislota bakteriyalari va achitqilari bilan yo&#8217;li bilan maxsus meshlarda aralashtirib tayyorlanadi. Tayyor Qimiz meshlarda saqlanadi, tashiladi. Quyganda ko&#8217;piradi. Tarkibida 2-2,5% oqsil, 1-2% yog&#8217;, 3,5-4,8% qand, 1 litr Qimizda 100-200 mg S, A, D, E, RR va V guruh vitaminlar; 400-600 mg fosfor hamda 800-1000 mg kaltsiy bor. Kuchsiz Qimiz tarkibida 0,6\u20140,8%, o&#8217;rtachasida 0,8\u2014 1%, kuchli- gida 1 \u2014 1,2% sut kislota; kuchsizida 1% gacha, o&#8217;rtachasida 1 \u2014 1,5% va kuchligida 3% gacha spirt bo&#8217;ladi. Qimizning energetik qiymati 300-400 kkal. Qimiz organizmda ovqat tarkibidagi oqsil va yog&#8217;larning tez hazm bo&#8217;lishiga yordam beradi, moddalar almashinuvini yaxshilaydi, ishtaha ochadi, parhez va shifobaxsh xususiyatlarga ega. Qimiz tayyorlash va ichish zamonlardan beri, ayniqsa, ko&#8217;chmanchi chorvador xalqlar o&#8217;rtasida keng yoyilgan.
