Olma, nok, olxo&#8217;ri, o&#8217;rik va b. mevalar yoki ularning aralashma- si pyuresi (bo&#8217;tqasi)ga shakar (odatda 1 dan 1,8 qismgacha pyurega 1 qism shakar) qo&#8217;shib qaynatib tayyorlanadi. Tabiiy kislotasi past bo&#8217;lgan pyurega limon yoki b. oziq-ovqat kislotasi qo&#8217;shiladi. Tayyorlangan mevalar ozgina suv solin- gan idishga solinib, qopqog&#8217;i berk holda 10-20 min. qaynatiladi. Mevalar pi- shib yumshagach, shakar qo&#8217;shiladi va ochiq idishda quyulgunga qadar (taxm. 1-1,5 soat) kavlab turib pishiriladi. Tayyor P. tarkibida 34% dan ortiq namlik, kami- da 60% shakar; 100 g P.da 250-260 kkal bo&#8217;ladi. Tayyor P. quruq shisha idishlarga solinib, usti temir qopqoq, tsellofan yoki pergament qog&#8217;oz b-n yopiladi.
