U o&#8217;simliklarning tur- li qismlarida, ayniqsa, kartoshka tu- guvagida, ildizida, bug&#8217;doy, sholi va makkajo&#8217;xori donida dovachalar shaklida tuplanadi. K. miqdori bug&#8217;doyda 75%, makkajuxorida 72%,guruchda 80%,kar- toshkada 12\u2014 24% ga etadi. Turli o&#8217;simliklardan olingan K. dovachala- rining shakli va hajmi xar xil. Mas, kartoshka K. do-vachalari nisbatan Yi- rik (kundalangi 25-100 MK), guruch K. dovachalari esa mayda (kundalangi 3-7 MK). K. dovachalari suvda isitilganda parchalanib, kleyster hosil qiladi. De- yarli barcha K.lar ikki xil polisaxarid \u2014 amiloza vaamilopektindan iborat. K. sovuq suv, spirt, efir va b. organic erituvchilarda erimaydi. Kislotalar ta&#8217;sirida gidrolizlanib, avval dek- strinlarga, so&#8217;ngra to&#8217;la gidroliz nati- jasida D-glyukozaga aylanadi. Ferment- lar ta&#8217;sirida ancha tez gidrolizlanadi. K. gidrolizini katalizlovchi ferment- lar amilazalar deb ataladi. Odam va hayvonlar uchun o&#8217;simlik K.i qimmatli oziq modda x.isoblanadi. In- sonning uglevodlarga bo&#8217;lgan ehtiyoji, asosan, non, kartoshka, krupalar va b. tarkibadagi K. b-n qoplanadi. Sanoatda K., asosan, kartoshka, makkajo&#8217;xoridan olinadi. Kartoshka K.i (kartoshka uni) olishda maydalab qorilgan kartoshka massasi suv b-n ishlanadi. Hosil bo&#8217;lgan K. sutini tindirib yoki tsentrifuga- lab K. ajratib olinadi. K. oziq-ovqat, qandolatchilik, go&#8217;sht mahsulotlari tay- yorlashda keng qo&#8217;llanadi. Etil spirt, bu- til spirt, atseton va sut kislota, tsitrat, glyukonat kislota, elim i.ch.da K.dan xom ashyo sifatida foydalaniladi. Anti- biotiklar, vitaminlar, poroshoklar tayyorlashda ishlatiladi.
