O&#8217;nga sut kislotali va spirtli achitish jarayonini hosil qiladigan K. zamburug&#8217;ida yoki maxsus oziq muhitda tayorlangan tomizg&#8217;i qo&#8217;shib ivitiladi. K.ning tayyor bo&#8217;lish mudda- tiga ko&#8217;ra, chuchuk (bir kunlik), o&#8217;rtacha (ikki kunlik), nordon (uch kunlik) xil- lari bo&#8217;ladi. K. qanchalik uzoq, ivitil- sa, shunchalik ko&#8217;p spirt (0,2\u2014 0,6 % gacha), sut kislotasi va karbonat angi- drid to&#8217;planadi. Sutni qayta ishlash korxonalarida yog&#8217;li (3,2 % sut yog&#8217;i) va kam yog&#8217;li (sut yog&#8217;i 0,05 % dan oshmaydi) K.lar ko&#8217;plab ishlab chiqariladi.
