Yog&#8217;larni mexanik va kimyoviy tozalash usullari bor. Mexanik tozalash yog&#8217;larni tindirish, suzish (filtrlash) va separatsiyalash (yot moddalardan ajratish) jarayonlarini o&#8217;z ichiga oladi. Yog&#8217;larni kimyoviy tozalash ularni trigliserid bo&#8217;lmagan, ammo urug&#8217; (mag&#8217;iz) tarkibida uchraydigan har xil yo&#8217;lakay moddalardan xoli qilish. Urug&#8217; murakkab kolloid sistema bo&#8217;lib, o&#8217;simlikning turi, agrotexnika usuli va saqlash sharoitlariga qarab uning tarkibida trigliseridlardan tashkari erkin holdagi yog&#8217;kislotalari, fosfolipidlar, oqsillar, karbon suvlar, har xil rang hamda hid beruvchi moddalar bo&#8217;ladi. Yog&#8217; olish jarayonida yuqorida qayd etilgan moddalar ham yog&#8217; bilan birga chiqadi. Ovqatga ishlatiladigan yog&#8217;lar trigliserid bo&#8217;lmagan aralashmalardan tozalanishi \u2014 rafinatsiya qilinishi shart. Aralashmalarning tarkibi va xususiyati hamda yog&#8217;ning qaysi maqsadda ishlatilishiga qarab rafinatsiya jarayoni ko&#8217;p bosqichli bo&#8217;lishi mumkin. Ko&#8217;p hollarda rafinatsiya yog&#8217;larni suv bilan ishlab (gidratatsiya) fosfolipid \u2014 oqsilkarbon suvlar kompleksini ajratib olishdan boshlanadi. Yog&#8217;lardagi qo&#8217;lansa hidni yo&#8217;qotish (dezodarasiya) uchun yog&#8217;160-200\u00b0 gacha qizdirilib, vakuumda 220-240\u00b0 li suv bug&#8217;i bilan ishlanadi.
